Kapha Cutting Rainbow Salad

I'm a Pitta-Vata who travels quite a bit, so managing my Vata is usually the more difficult dosha-balancing act for me, so I usually eat more cooked veggies and Kapha is generally the least of my worries.  On the occasion that I do feel or see Kapha settling in a little too comfortably though, I make a batch of this salad and munch on it with my meals for a couple days- it really helps! All of the veggies here are great for reigning in Kapha, and the variety of color tells you you're getting lots of vitamins and minerals :)  The vegetable combo tastes excellent already, so just about any dressing works on this salad, but I like a creamy dressing to complement the crunch. It goes great with this turmeric-infused Thai-style peanut dressing :)  

You'll need: 

1 bunch of kale  
1/2 head of purple cabbage
1 red bell pepper
1-2 carrots, depending on size
1 small head of broccoli
1 tablespoon each hemp hearts and sunflower seeds (optional) 

Directions:

1.   Cut the ribs/stalks out of your kale, and slice the leaves into small bite-size ribbons

2.  Chop your veggies in to bite-size pieces- if you want a little guidance in this, I describe below how I cut mine

2.   Mix them all together in a bowl, sprinkle in your hemp hearts and sunflower seeds, and dress with your favorite dressing! 

3.   Enjoy!

For the broccoli, I like to separate the florets from the stalks, and chop the stalks into bite size pieces. (Just a note on broccoli: it is a cruciferous veggie, so Ayurveda will say it should generally be cooked, but occasionally eating it raw is OK) The stalks often get thrown out, but they're super nutritious and they have a really lovely mild flavor.   I cut the cabbage into quarters or sixths, and chop it into thin slices almost like a slaw.  After peeling the carrot, I cut it lengthwise down the center, leaving about an inch below the top, and then use the peeler to peel short ribbons along the slit. This gives me thin little carrot bits that have substance but aren't too much for one bite. And the bell pepper I just cut like into strips and then halve those.  These methods are obviously just suggestions thought, feel free to chop your veggies however you see fit!  

Raw veggies are relatively easy for Kapha and Pitta digestive systems, but Vatas will often have difficulty digesting and therefore absorbing nutrients from raw vegetables ie raw salads. For Vatas, cooked veggies are really the way to go. If you're a Vata like me, you can also heat this salad up in a skillet to cook the vegetables a little, and toss it with this dressing for a really yummy warm salad that's a bit easier on the digestive system <3
